Description

Garlic herb chicken is an easy dinner perfect for busy weeknights. This simple chicken recipe features tender chicken coated in fresh herbs with a sticky glaze, making it ideal for a family dinner or a quick chicken dinner option.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • Half cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Pat the chicken dry and season with salt and pepper. Combine garlic, parsley, and thyme then rub onto chicken. Let rest for 10 minutes.
  2. Heat olive oil over medium-high and sear chicken undisturbed for 5-6 minutes until browned. Flip and cook 5-6 minutes more. Add butter and baste chicken, cook until internal temperature is 165°F then remove and cover.
  3. In the same skillet, stir in brown sugar and balsamic vinegar over medium heat until caramelized, about 2 minutes. Add chicken broth, scrape browned bits, then simmer 5-7 minutes until sauce thickens. Season to taste.
  4. While chicken cooks, boil peeled and chopped potatoes in salted water until tender, 15-20 minutes. Drain and mash with butter and cream. Season with salt and pepper.
  5. Serve chicken over mashed potatoes and drizzle with pan sauce. Garnish with fresh herbs if desired. Serve hot.

Notes

  • For extra juicy chicken, brine the breasts in salted water for 30 minutes before cooking
  • The internal temperature of chicken should reach 165 degrees Fahrenheit for food safety
  • If your chicken breasts are very thick, pound them to an even thickness for uniform cooking
  • The pan sauce can be made thicker by adding a cornstarch slurry or thinner by adding more broth
  • Fresh herbs work best for this recipe, but you can substitute with half the amount of dried herbs in a pinch
