Description

Garlic Herb Chicken with Zucchini is a simple chicken recipe perfect for an easy dinner or quick weeknight meal. This family dinner features tender chicken cooked in a flavorful buttery garlic herb sauce with fresh zucchini. It’s a healthy and delicious choice for any night.


Ingredients

  • 3 tablespoons butter
  • 4 cloves minced garlic
  • ¼ cup freshly chopped oregano
  • 1 teaspoon fresh chopped rosemary
  • 1 teaspoon fresh chopped thyme
  • 1 pound boneless skinless chicken thighs or breasts
  • salt and pepper
  • 2 medium sliced zucchini

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the minced garlic, oregano, rosemary, and thyme; cook until the aroma is released, about 1 minute.
  3. Place the chicken thighs in the skillet and cook each side for 7 to 8 minutes until fully cooked and no longer pink inside.
  4. Remove the chicken and keep it warm.
  5. In the same skillet, add the sliced zucchini and season with salt and pepper. Cook until tender, between 3 and 5 minutes.
  6. Return the chicken to the pan with the zucchini and heat together briefly before serving.
