Description

This Garlic Italian Broccoli Soup is a comforting dish brimming with fresh vegetables and rich flavors. It is perfect for easy weeknight dinners and offers a cozy, hearty meal anyone will enjoy.

  • 1 lb broccoli stems and florets divided
  • 4 cups chicken stock or vegetable stock or water optional
  • 2 cups water
  • 3 to 4 cloves garlic smashed
  • 1 tsp kosher salt
  • black pepper freshly ground to taste
  • 1/4 tsp ground nutmeg optional
  • 3/4 cup orzo or ditalini
  • parmesan cheese finely grated
  • extra virgin olive oil

Instructions

  1. In a large pot, place the broccoli stems and florets together with chicken stock, water, garlic cloves, kosher salt, and freshly ground black pepper and bring to a vigorous boil.
  2. Lower the heat, cover the pot, and gently simmer the mixture for 30 minutes to develop flavors.
  3. Mash the broccoli in the pot using a potato masher or pulse briefly with an immersion blender, leaving some chunks for texture.
  4. Add the orzo or ditalini pasta and cook uncovered for 15 minutes, stirring regularly to avoid sticking as the pasta absorbs the broth.
  5. Mix in the ground nutmeg if using, adjust salt and pepper as necessary, then ladle the soup into bowls and finish with grated parmesan, a drizzle of olive oil, and more black pepper if wanted.
