Description

Garlic Lemon Chicken Quinoa is a flavorful and wholesome meal perfect for an easy dinner or weeknight meal. This family-friendly lemon chicken recipe combines fresh ingredients for a healthy quinoa bowl everyone will enjoy.


Ingredients

Scale
  • 2 pieces Chicken breasts Boneless and skinless
  • 3 cloves Garlic cloves Freshly minced
  • 1/4 cup Lemon juice Freshly squeezed
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Quinoa Rinsed
  • 2 cups Chicken broth
  • 1/4 cup Fresh parsley Chopped
  • 1/4 teaspoon Red pepper flakes For heat
  • 1 cup Cherry tomatoes Halved
  • 2 cups Spinach or kale Tossed in near the end

Instructions

  1. Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl and coat the chicken breasts thoroughly, then let them rest for 10 minutes to absorb the flavors.
  2. Warm a large skillet over medium heat and cook the chicken for 5 to 6 minutes on each side until golden and cooked through with clear juices.
  3. Stir the rinsed quinoa in the skillet for 2 minutes, allowing it to toast lightly and develop aroma.
  4. Add chicken broth and bring the mixture to a boil; then cover and reduce the heat to low, cooking for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  5. Place the cooked chicken back into the quinoa, cover, and let it rest for 5 minutes to let the flavors blend.
  6. Serve by garnishing with chopped parsley, cherry tomatoes, and red pepper flakes to add color and zest.
