- 2 pieces Chicken breasts Boneless and skinless
- 3 cloves Garlic cloves Freshly minced
- 1/4 cup Lemon juice Freshly squeezed
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 cup Quinoa Rinsed
- 2 cups Chicken broth
- 1/4 cup Fresh parsley Chopped
- 1/4 teaspoon Red pepper flakes For heat
- 1 cup Cherry tomatoes Halved
- 2 cups Spinach or kale Tossed in near the end
Instructions
- Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl and coat the chicken breasts thoroughly, then let them rest for 10 minutes to absorb the flavors.
- Warm a large skillet over medium heat and cook the chicken for 5 to 6 minutes on each side until golden and cooked through with clear juices.
- Stir the rinsed quinoa in the skillet for 2 minutes, allowing it to toast lightly and develop aroma.
- Add chicken broth and bring the mixture to a boil; then cover and reduce the heat to low, cooking for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
- Place the cooked chicken back into the quinoa, cover, and let it rest for 5 minutes to let the flavors blend.
- Serve by garnishing with chopped parsley, cherry tomatoes, and red pepper flakes to add color and zest.
