- 1 lb ground chicken
- 4 cloves fresh garlic minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs plain or Italian-seasoned
- 2 large eggs
- 1 medium onion diced
- 2 tbsp soy sauce low-sodium recommended
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Set your oven to 375°F and coat a baking dish lightly with nonstick spray.
- Heat a skillet to medium and cook the diced onions until they soften, about 5 minutes.
- In a large bowl, blend the ground chicken with the cooked onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until evenly mixed.
- Press the mixture into a loaf shape in the prepared baking dish.
- Sprinkle the remaining Parmesan cheese evenly on top and add optional paprika or Italian seasoning if desired.
- Bake the loaf for 45 to 50 minutes or until the inside reaches 165°F.
- Allow the meatloaf to rest for 10 minutes before cutting into slices.
