- 2 large sweet potatoes
- 4 tablespoons olive oil
- 4 cloves garlic minced
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh parsley chopped for garnish
- Optional ¼ teaspoon red pepper flakes for heat
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Wash and scrub the sweet potatoes then cut into 1 inch thick wedges.
- In a small bowl, mix olive oil garlic smoked paprika onion powder salt black pepper and red pepper flakes if using.
- Toss the sweet potato wedges with the garlic oil mixture until evenly coated.
- Sprinkle half of the Parmesan cheese over the wedges and mix to cover evenly.
- Spread the wedges in a single layer on the baking sheet without overcrowding.
- Bake for 25 to 30 minutes turning halfway through until golden brown and crisp.
- Remove wedges from oven and sprinkle remaining Parmesan cheese on top while hot to melt slightly.
- Transfer to a platter and garnish with fresh parsley then serve immediately.
