Ingredients

  • 8 ounces dried udon ramen soba lo mein noodles or spaghetti
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 3 tablespoons toasted sesame oil divided
  • 1 tablespoon honey
  • 2 teaspoons cornstarch
  • 1 teaspoon Asian chili-garlic sauce such as sambal oelek optional
  • 4 cloves garlic minced
  • 1 pound lean ground beef
  • 1/2 teaspoon kosher salt plus more for the noodles
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 small head green cabbage about 10 ounces thinly sliced about 4 cups
  • 1 small yellow onion thinly sliced about 1 cup
  • Thinly sliced scallions for garnish optional

Instructions

  1. Heat a large pot with salted water to boiling and cook the noodles for one minute less than the package directs.
  2. While they cook, mix soy sauce, rice vinegar, one tablespoon toasted sesame oil, honey, cornstarch, chili-garlic sauce if using, and minced garlic in a bowl.
  3. Drain noodles and rinse under cold water, then let them rest in a strainer.
  4. Warm one tablespoon sesame oil in a skillet over medium-high heat until it shimmers, then add ground beef seasoned with salt and pepper and cook, stirring to break it into medium pieces, until browned about 5 to 7 minutes. Remove beef from pan.
  5. Add remaining sesame oil to the skillet, toss in sliced cabbage and onion, spread in a single layer and let brown undisturbed for about 3 minutes, then toss and cook another 1 to 2 minutes until crisp-tender.
  6. Lower heat to medium, return beef and its juices to skillet, add noodles, whisk sauce again and pour it in. Toss regularly for about one minute until noodles are warmed and coated with sauce.
  7. Garnish with scallions if desired and serve.

Notes

  • The sauce can be prepared a day in advance and refrigerated
