Instructions

  1. Heat salted water to a rolling boil then add penne pasta and cook for 8 to 10 minutes until nearly al dente. Drain the pasta while reserving some pasta water and let it cool slightly.
  2. Warm olive oil in a large skillet over medium heat and cook the diced yellow onion until soft and translucent, about 5 minutes.
  3. Crumble ground turkey into the pan and brown it for 6 to 8 minutes. Season with salt pepper and Italian seasoning then add garlic and cook for one more minute.
  4. Stir in the flour and cook for a minute to remove the raw taste. Slowly add chicken broth and tomato sauce stirring constantly and simmer for 3 to 5 minutes until thickened.
  5. Mix the cooked pasta into the sauce and add half-and-half, adjusting sauce consistency with reserved pasta water if needed.
  6. Reduce heat then blend in half the mozzarella and cheddar cheeses until melted and bubbly, about 2 to 3 minutes. Turn off heat and sprinkle remaining cheese on top then cover and let rest for a few minutes.
  7. Garnish with fresh parsley and red chili flakes before serving.
