- 4 small chicken breasts about 1 1/4 pounds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cups cooked rice or quinoa
- 2 cups halved grape tomatoes
- 2 cups diced cucumber
- 4 cups shredded romaine lettuce
- 1 cup sliced red onion
- 1/2 cup feta cheese
- Tzatziki sauce made with Greek yogurt grated cucumber garlic and fresh dill
Instructions
- In a bowl, blend olive oil lemon juice honey garlic powder oregano basil salt pepper and red pepper flakes until well combined.
- Gently flatten the chicken breasts to even thickness and soak them in the marinade for a minimum of 30 minutes.
- Prepare the tzatziki sauce by mixing Greek yogurt grated cucumber lemon juice olive oil garlic salt and fresh dill in another bowl.
- Follow package instructions to cook rice or quinoa and chop the fresh vegetables as needed.
- Heat your air fryer to 380 degrees Fahrenheit and cook the marinated chicken for about 10 minutes until the internal temperature reaches 165 degrees Fahrenheit.
- Allow the chicken to rest briefly before slicing and then assemble your bowls layering rice or quinoa vegetables chicken and finished with tzatziki sauce.
