  • 8 cups chicken broth
  • ½ cup fresh lemon juice
  • ½ cup shredded carrots
  • ½ cup finely chopped onion
  • ½ cup finely chopped celery
  • 6 tablespoons chicken soup base
  • ¼ teaspoon ground white pepper
  • ¼ cup margarine
  • ¼ cup all-purpose flour
  • 8 egg yolks
  • 1 cup cooked white rice
  • 1 cup diced cooked chicken
  • 16 lemon slices

Instructions

  1. In a large pot, combine the chicken broth, lemon juice, carrots, onion, celery, chicken soup base, and white pepper, then bring to a boil over high heat.
  2. Lower the heat and simmer the mixture for 15 to 20 minutes until the vegetables are soft.
  3. In a small bowl, blend the margarine and flour until smooth, then gradually stir this into the simmering soup and cook while stirring frequently for 8 to 10 minutes until it thickens slightly.
  4. Beat the egg yolks in a separate bowl until creamy, slowly whisk in a ladle of hot soup to temper the eggs, then pour the egg mixture back into the pot while stirring gently, heating the soup without boiling.
  5. Add the cooked rice and chicken to the pot and warm through for a few minutes.
  6. Serve by ladling soup into bowls, garnishing each with a lemon slice.
