Description

This tasty ground beef and potato skillet is a perfect easy dinner for busy weeknights. Simple to make and loved by the whole family, it’s an ideal one pan dinner and great for any weeknight meal.


Ingredients

  • 1 Tbsp oil
  • 1 lb potatoes about 2 medium in ½ inch dice
  • 1 lb lean ground beef
  • 1 and 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 1/2 tsp smoked paprika
  • 1 cup shredded Cheddar cheese
  • 2 green onions chopped

Instructions

  1. Warm the oil in a large skillet over medium-high heat.
  2. Place the diced potatoes in a single layer and let them cook without stirring for about 2 minutes until they develop a light brown underlayer.
  3. Stir the potatoes then allow them to cook still without stirring for another 2 minutes to brown further.
  4. Push the potatoes to one side of the skillet and add the ground beef on the other side. Season both with salt and pepper.
  5. Break the beef apart with a wooden spoon and spread it across its half of the skillet. Press down gently and cook for 4 minutes without stirring, stirring the potatoes occasionally.
  6. If there is any excess fat from the beef, remove it with a spoon.
  7. Add the chopped onion, bell pepper, garlic, and smoked paprika over the meat and potatoes. Stir and turn everything until well combined.
  8. Continue cooking with occasional stirring until the vegetables are tender, beef is fully browned, and potatoes can be pierced with a fork, about 3 to 4 minutes.
  9. Remove the skillet from heat, sprinkle the shredded cheddar cheese on top, and let it melt from the steam.
  10. Garnish with chopped green onions and serve immediately.
