Description
This tasty ground beef and potato skillet is a perfect easy dinner for busy weeknights. Simple to make and loved by the whole family, it’s an ideal one pan dinner and great for any weeknight meal.

- 1 Tbsp oil
- 1 lb potatoes about 2 medium in ½ inch dice
- 1 lb lean ground beef
- 1 and 1/2 tsp salt
- 1/2 tsp pepper
- 1 medium onion chopped
- 1 bell pepper chopped
- 2 cloves garlic minced
- 1/2 tsp smoked paprika
- 1 cup shredded Cheddar cheese
- 2 green onions chopped
Instructions
- Warm the oil in a large skillet over medium-high heat.
- Place the diced potatoes in a single layer and let them cook without stirring for about 2 minutes until they develop a light brown underlayer.
- Stir the potatoes then allow them to cook still without stirring for another 2 minutes to brown further.
- Push the potatoes to one side of the skillet and add the ground beef on the other side. Season both with salt and pepper.
- Break the beef apart with a wooden spoon and spread it across its half of the skillet. Press down gently and cook for 4 minutes without stirring, stirring the potatoes occasionally.
- If there is any excess fat from the beef, remove it with a spoon.
- Add the chopped onion, bell pepper, garlic, and smoked paprika over the meat and potatoes. Stir and turn everything until well combined.
- Continue cooking with occasional stirring until the vegetables are tender, beef is fully browned, and potatoes can be pierced with a fork, about 3 to 4 minutes.
- Remove the skillet from heat, sprinkle the shredded cheddar cheese on top, and let it melt from the steam.
- Garnish with chopped green onions and serve immediately.
