  • 2 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper
  • 1 yellow onion chopped
  • 8 ounces tomato sauce
  • 4 cups beef broth
  • 4 cups cabbage cut into 1 inch chunks
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 14 ounces canned diced tomatoes do not drain

Instructions

  1. Heat olive oil in a large pot over high heat.
  2. Add ground beef, chopped onion, salt, and pepper, breaking the beef apart while cooking until it browns, about 6 to 8 minutes.
  3. Pour in tomato sauce, beef broth, cabbage chunks, sliced carrots, sliced celery, and canned diced tomatoes then stir until combined.
  4. Bring the soup to a boil, then lower the heat and let it simmer for 20 minutes until the vegetables are tender.
