- 2 medium sweet potatoes peeled and diced
- 1 avocado sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey (store-bought or homemade)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F and toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 25 minutes until tender.
- While potatoes roast, heat remaining olive oil in a skillet over medium heat and cook diced onion until soft.
- Add ground beef to the skillet and cook until browned, then stir in taco seasoning and 1/4 cup water; simmer for 5 minutes until sauce thickens.
- Assemble the bowl by adding roasted sweet potatoes, taco-seasoned beef, cottage cheese, sliced avocado, and drizzle hot honey on top.
- Serve warm and enjoy.
