- 350g or 12.4ozs your favourite dried pasta (I used 26 gnocco)
- 250g or 8.8ozs lean beef mince (you can use all regular beef mince)
- 250g or 8.8ozs regular beef mince
- 1.5 teaspoons curry powder
- 1 small onion diced
- 2 tablespoons paprika sweet
- 1 cup or 250g or 8.8ozs Greek yogurt
- 3 cloves garlic minced
- 3–4 large tomatoes
- 1/2 cup parsley chopped
- 60g or 2ozs butter melted
- 2 teaspoons paprika sweet
- Salt and pepper to season
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until it is just tender, about 7 to 8 minutes. While the pasta cooks, warm a frying pan over medium-high heat and add both types of ground beef. Cook the meat, breaking it up well, and halfway through sprinkle the curry powder, pressing the meat down with a spatula to crumble it finely.
- Once the meat is browned through, stir in the diced onion and paprika powder, letting the onion soften and turn translucent as fat from the meat cooks it.
- Mix the Greek yogurt with minced garlic in a bowl, and in a separate small bowl combine melted butter with paprika. Dice the tomatoes and roughly chop the parsley.
- Drain the pasta when ready and combine it with the beef mixture. Top with the diced tomatoes, parsley, garlic yogurt, and drizzle the paprika butter to finish the dish.
