Ingredients

Scale
  • 1 tbsp extra virgin olive oil
  • 1 lb. lean ground turkey
  • 1 small sweet onion diced
  • 2 cloves garlic minced
  • 15 oz. can diced tomatoes undrained
  • 6 oz. fresh green beans cut into 2 inch pieces about 1½ cups
  • 1½ cups uncooked short or long grain white rice
  • 2½ cups low sodium chicken broth
  • 1 tsp coarse salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ½ tsp dried Italian herbs
  • 1/8 tsp cracked red pepper flakes
  • 2 tsp grainy mustard
  • 2 tsp Worcestershire sauce

Instructions

  1. Warm the olive oil in a large nonstick skillet over medium-high heat.
  2. Add ground turkey and diced onion; cook while breaking the turkey into small pieces, stirring until the onion softens and turkey is no longer pink, about 3 minutes.
  3. Mix in minced garlic and cook just until its aroma is noticeable, about 20 seconds.
  4. Sprinkle some salt and pepper to taste, then drain any excess fat from the skillet and return it to the stove.
  5. Pour in the remaining ingredients and stir thoroughly.
  6. Bring the mixture to a boil, cover with a lid, then lower the heat to medium-low and simmer for 20 to 22 minutes until the rice is tender.
  7. Remove skillet from heat, taste, and add any seasoning adjustments as desired before serving immediately.
