- 1¼ lb. lean ground turkey or ground chicken
- 1 tablespoon olive oil
- 1 clove garlic minced
- 1/8 teaspoon ground ginger
- 4 green onions thinly sliced
- 1 8 oz can sliced water chestnuts drained and coarsely chopped
- 3 tablespoons hoisin sauce
- 2 tablespoons lower-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons roasted red chili paste
- Pinch of salt
- 12 Bibb or Butter lettuce leaves
Instructions
- Warm the olive oil in a large skillet on medium-high heat then add ground turkey, garlic, and ginger. Cook for around 6 minutes, breaking the turkey apart until browned.
- Transfer the cooked turkey mixture to a bowl and mix in green onions and water chestnuts thoroughly.
- In a separate small bowl, blend hoisin sauce, soy sauce, rice vinegar, and chili paste then pour over the turkey mixture, tossing everything until fully coated.
- Spoon about one-quarter cup of the mixture into each lettuce leaf and serve immediately.
