Description

Healthy Baked Feta Orzo is a perfect quick dinner combining fresh vegetables and creamy feta baked to perfection. It’s an easy one pan meal that’s ideal for busy weeknights and tastes delicious every time.


Ingredients

Scale
  • 3 tbsp olive oil
  • 1 block feta cheese
  • 10 oz cherry tomatoes halved for quicker roasting
  • 7 oz asparagus cut into 1-inch pieces
  • 2 cups orzo pasta I use Barilla brand
  • 0.5 oz fresh basil finely chopped for even distribution
  • 2 tbsp fresh chives
  • 2 tbsp mascarpone cheese
  • black pepper
  • 3.5 oz baby spinach roughly chopped
  • salt

Instructions

  1. Preheat your oven to 200°C or 390°F.
  2. Place the block of feta cheese in the middle of a large oven-safe pan and drizzle 1 tablespoon of olive oil over it.
  3. Roast the feta in the oven for about 8 minutes until it starts to soften.
  4. While the feta roasts, prepare the orzo pasta according to the package instructions.
  5. Once the feta is ready, combine it with the roasted cherry tomatoes and asparagus in the pan.
  6. Stir in the cooked orzo, chopped spinach, mascarpone cheese, fresh basil, and chives.
  7. Season with salt and black pepper to taste and mix everything gently until well combined.

Notes

  • For crisp tops, broil 2–3 minutes at the end
