This Healthy Chicken Burrito Bowls recipe is packed with fresh ingredients and vibrant flavors. It’s quick to prepare and perfect for busy weeknights, delivering a protein-rich meal topped with a tangy cilantro-lime dressing.


Ingredients

  • 1 cup loosely packed cilantro
  • ½ cup plain Greek yogurt
  • 2 Tbs. lime juice
  • 2 garlic cloves roughly chopped
  • ¼ cup olive oil
  • 1 tsp. white wine vinegar
  • ¼ tsp salt
  • 1 ¼ pound raw chicken breasts diced into 1 inch chunks
  • 3 teaspoons taco seasoning
  • 1 ½ teaspoon brown sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon olive oil
  • 2 cups prepared brown rice I use frozen
  • 3 tablespoons cilantro finely chopped
  • juice of 1 lime
  • ½ teaspoon salt
  • 1 head romaine lettuce chopped
  • 112 ounce bag fire roasted corn prepared
  • 1 pint cherry tomatoes halved
  • 1 can black beans drained and rinsed

Instructions

  1. Blend all the dressing ingredients together in a food processor or blender until completely smooth, scraping down sides as needed.
  2. Preheat the air fryer to 400 degrees.
  3. In a bowl, mix taco seasoning, brown sugar, and cornstarch, then stir in olive oil.
  4. Coat the diced chicken with the spice and oil mixture evenly.
  5. Place the chicken in a single layer inside the air fryer basket, leaving space for air flow.
  6. Cook the chicken for 9 to 12 minutes until it reaches 165 degrees internally.
  7. Prepare rice according to package instructions, then mix warm rice with chopped cilantro, lime juice, and salt.
  8. Assemble each bowl by dividing chicken, corn, black beans, rice, tomatoes, and lettuce into four portions.
  9. Drizzle the cilantro-lime dressing over each bowl and serve.
