- 2 Tbsp. olive oil
- 1 small red onion
- 3 garlic cloves minced
- 4 cups chicken broth
- 2 15 ounce cans fire-roasted diced tomatoes
- ¼ cup chopped fresh cilantro
- 2 15 ounce cans black beans rinsed and drained
- 1 can corn drained
- 1 Tbsp. ground cumin plus more to taste
- ½ teaspoon dried oregano
- 2 whole chicken breasts or 2–3 cups Rotisserie chicken chopped
- 2 cups Cabot Cheese use your favorite flavor
- Salt and pepper

Instructions
- In a large pot, heat the oil over medium heat and cook the onion and garlic until soft about 3 minutes.
- Add the remaining soup ingredients to the pot including chicken breasts if using.
- Bring to a boil then reduce to a simmer and cook for 1 hour.
- Remove chicken breasts, shred them and return to pot or add rotisserie chicken.
- Add 2 cups of cheese and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
- Ladle into bowls and serve with optional toppings.
