- 2 tablespoons olive oil
- 1 large onion diced
- 3 cloves garlic minced
- 2 large carrots diced
- 2 celery stalks diced
- 1½ cups dried green or brown lentils rinsed
- 3 medium potatoes diced
- 1 can 14.5 oz diced tomatoes with juices
- 8 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- Salt and black pepper to taste
- 2 cups fresh spinach or kale optional
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion garlic carrots and celery and sauté until tender about 5 minutes.
- Stir in lentils potatoes diced tomatoes vegetable broth and spices.
- Bring to a boil then reduce heat to simmer.
- Cover and cook until lentils and potatoes are tender about 30 to 35 minutes.
- Stir in fresh spinach or kale if using and cook until wilted about 2 minutes.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley and serve warm.
Notes
- For extra flavor roast the vegetables before adding the broth
- You can also add a splash of lemon juice for brightness before serving
