A comforting and nutritious soup combining lentils and potatoes, perfect for cozy meals. This hearty dish is packed with flavor and wholesome ingredients to warm your soul.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 large carrots diced
  • 2 celery stalks diced
  • 1½ cups dried green or brown lentils rinsed
  • 3 medium potatoes diced
  • 1 can 14.5 oz diced tomatoes with juices
  • 8 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale optional
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion garlic carrots and celery and sauté until tender about 5 minutes.
  3. Stir in lentils potatoes diced tomatoes vegetable broth and spices.
  4. Bring to a boil then reduce heat to simmer.
  5. Cover and cook until lentils and potatoes are tender about 30 to 35 minutes.
  6. Stir in fresh spinach or kale if using and cook until wilted about 2 minutes.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor roast the vegetables before adding the broth
  • You can also add a splash of lemon juice for brightness before serving
