  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes with juices
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil for cooking

Instructions

  1. Cook penne pasta according to package instructions until al dente then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat add chopped onion and minced garlic sauté until softened about 3-4 minutes.
  3. Add lean ground beef to the skillet cook until browned breaking it apart with a spoon about 5-7 minutes.
  4. Stir in diced tomatoes with juices beef broth and Italian seasoning bring to a simmer and cook for 10 minutes to let flavors meld.
  5. Remove skillet from heat stir in Greek yogurt and grated Parmesan cheese season with salt and pepper to taste.
  6. Add cooked penne pasta to the skillet toss to combine and coat pasta with the creamy beef sauce.
  7. Garnish with fresh basil or parsley serve immediately.
