- 2 large eggs
- 1/2 cup milk or milk alternative
- 1 tablespoon maple syrup optional
- 1 teaspoon vanilla extract
- cooking spray or coconut oil for the pan
Instructions
- Blend oats, protein powder, baking powder, cinnamon, and salt until they become a fine flour-like texture.
- In another bowl, whisk eggs, milk, maple syrup if using, and vanilla extract together.
- Combine the wet mixture with the dry ingredients and mix until just blended, leaving some lumps.
- Let the batter sit for 5 to 10 minutes to thicken.
- Warm a non-stick pan with cooking spray or coconut oil over medium heat.
- Pour 1/4 cup of batter per pancake onto the pan.
- Cook each pancake for 2 to 3 minutes until bubbles form on top and edges look set.
