Description

This high protein ground beef bowl meal prep is perfect for easy dinner and weeknight meal solutions. It combines healthy dinner ingredients with a family dinner vibe, creating a protein bowl packed with flavor and nutrition.


Ingredients

Scale
  • 2 sweet potatoes cubed
  • 1 1/2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 lb ground beef
  • 1 1/2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp pepper
  • cottage cheese
  • 2 avocados
  • 1/4 cup hot honey
  • chili flakes
  • green onion for garnish

Instructions

  1. Heat your oven to 400°F and prepare the sweet potatoes by tossing them in olive oil and the seasonings. Spread them evenly on a baking tray and roast for 20 minutes.
  2. While the potatoes cook, brown the ground beef in a pan over medium heat, mixing in all the spices until fully cooked and fragrant.
  3. Construct the bowl by layering roasted sweet potatoes, cooked beef, a scoop of cottage cheese, sliced avocado, a drizzle of hot honey with chili flakes, and finish with a sprinkle of green onions.

  • For crisp tops, broil 2–3 minutes at the end
