Description

This High Protein Ground Turkey Casserole is a cheesy and satisfying easy dinner perfect for a weeknight meal. It’s loaded with lean protein, making it a healthy casserole option your whole family will enjoy during family dinner.


Ingredients

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese softened
  • 5 oz fresh spinach chopped or whole
  • 1 cup cheddar cheese freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper to taste
  • Optional ½ cup diced red bell peppers
  • Optional ¼ cup plain Greek yogurt
  • Optional mozzarella instead of cheddar

Instructions

  1. Heat your oven to 375°F and lightly grease a 9×9 baking dish.
  2. In a skillet over medium heat, cook the ground turkey for 6 to 8 minutes, breaking it up as it browns.
  3. Add garlic powder, salt, and pepper to the turkey, then stir in the spinach and cook until it wilts, about 2 to 3 minutes.
  4. Turn the heat to low and mix in the softened cream cheese until it melts completely.
  5. Allow the mixture to cool for 5 minutes, then blend in the beaten egg and half of the cheddar cheese.
  6. Pour the mixture into the baking dish and sprinkle the remaining cheddar on top.
  7. Bake the casserole uncovered for 20 to 25 minutes until the top is golden and bubbling.
  8. Let the casserole stand for 10 minutes before cutting and serving.
