- 1 lb ground turkey (lean)
- 4 oz cream cheese softened
- 5 oz fresh spinach chopped or whole
- 1 cup cheddar cheese freshly shredded
- 1 egg
- ½ tsp garlic powder
- ¼ tsp salt
- Black pepper to taste
- Optional ½ cup diced red bell peppers
- Optional ¼ cup plain Greek yogurt
- Optional mozzarella instead of cheddar
Instructions
- Heat your oven to 375°F and lightly grease a 9×9 baking dish.
- In a skillet over medium heat, cook the ground turkey for 6 to 8 minutes, breaking it up as it browns.
- Add garlic powder, salt, and pepper to the turkey, then stir in the spinach and cook until it wilts, about 2 to 3 minutes.
- Turn the heat to low and mix in the softened cream cheese until it melts completely.
- Allow the mixture to cool for 5 minutes, then blend in the beaten egg and half of the cheddar cheese.
- Pour the mixture into the baking dish and sprinkle the remaining cheddar on top.
- Bake the casserole uncovered for 20 to 25 minutes until the top is golden and bubbling.
- Let the casserole stand for 10 minutes before cutting and serving.
