This Easy Hobo Casserole is a warm and satisfying family friendly dish perfect for a quick hobo dinner. It combines ground beef and veggies with cheesy layers for a comforting and delicious meal any day.

- 1 pound ground beef
- 1 medium onion chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 medium potatoes thinly sliced
- 1 can (10.5 ounces) cream of mushroom soup
- ½ cup milk
- 1 ½ cups shredded cheddar cheese
- ½ teaspoon paprika (optional for garnish)
- 1 tablespoon butter melted
Instructions
- Preheat your oven to 375°F
- Lightly grease a 9×13-inch baking dish
- Peel and slice potatoes into thin rounds
- Cook ground beef and chopped onion in a skillet until beef is browned and onions are soft then drain grease
- Season beef mixture with garlic powder onion powder salt and black pepper and stir well
- Layer half of the potatoes in the baking dish followed by half of the beef mixture then repeat layers with remaining potatoes and beef
- Mix cream of mushroom soup with milk and pour evenly over casserole
- Sprinkle shredded cheddar cheese and drizzle melted butter over the top
- Cover with foil and bake for 45 minutes
- Remove foil and bake another 15 minutes until cheese is bubbly and golden
- Let casserole rest 5-10 minutes then sprinkle with paprika if desired and serve

- For crisp tops, broil 2–3 minutes at the end
