Ingredients

  • 1 cup granulated sugar 200 grams
  • 2 tablespoons all-purpose flour 15 grams
  • 1 teaspoon ground cinnamon 3 grams
  • 68 apples peeled and sliced
  • 2 homemade pie crusts (click for recipe!)
  • 2 tablespoons unsalted butter 28 grams cubed ¼ stick

Instructions

  1. Preheat oven to 400°F.
  2. Combine the sugar, flour, and cinnamon in a large bowl until well-mixed.
  3. Add the apples, tossing until well coated.
  4. Line a pie pan with one pie crust and pour in the sugar-coated apples.
  5. Dot with cubes of butter.
  6. Place the second crust on top, seal, and cut slits for steam.
  7. Spread a small amount of milk on top and sprinkle with leftover sugar.
  8. Bake for 50 minutes, using a lower rack with a cookie sheet to catch overflow.
  9. Let pie cool before slicing and serving.

  • For crisp tops, broil 2–3 minutes at the end
