- 2 pounds chicken thighs boneless skinless

- 1/3 cup low-sodium soy sauce
- 1/3 cup honey
- 1/3 cup ketchup
- 6 cloves garlic minced
- 1/2 teaspoon apple cider vinegar
- 1 teaspoon grated fresh ginger
- 1 pinch crushed red pepper flakes optional
- 2 tablespoons cornstarch
Instructions
- Place the chicken thighs evenly in the slow cooker.
- Combine all sauce ingredients except cornstarch in a bowl and whisk until smooth.
- Pour the sauce over the chicken and cook on high for 3.5 hours or low for 6 to 8 hours.
- Stir together cornstarch and cold water, then add to the slow cooker and mix well.
- Continue cooking on high for 15 minutes to thicken the sauce.
