Ingredients

  • 1 pound carrots peeled and sliced
  • 1 pound green beans trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Heat your oven to 400°F 200°C.
  2. Combine the carrots and green beans with olive oil honey lemon juice cinnamon nutmeg salt and pepper in a large bowl making sure they are all coated well.
  3. Arrange the vegetables in a single layer across a baking sheet.
  4. Roast them in the oven for 20 to 25 minutes until the carrots soften slightly caramelize and the green beans become tender yet crisp. Stir the veggies halfway through roasting.
  5. Take the pan out of the oven then transfer the vegetables to a serving plate.
  6. Sprinkle chopped fresh parsley on top for garnish. Serve right away and enjoy your dish.
