- 4 chicken thighs bone-in and skin-on
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 cloves garlic minced
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground black pepper
- 1 cup fresh or dried figs halved or quartered
- 1/4 cup white wine or chicken broth optional for roasting pan
- Fresh thyme sprigs for garnish optional
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with salt and freshly ground black pepper.
- In a large ovenproof skillet, heat olive oil over medium-high heat. Add chicken thighs skin-side down and cook until golden brown, about 5-7 minutes.
- Flip the chicken and add garlic, thyme leaves, ground cinnamon, ground black pepper, honey, and figs around the chicken.
- Pour white wine or chicken broth into the pan if using.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through and the figs are soft.
- Garnish with fresh thyme sprigs if desired and serve warm.
Notes
- Use bone-in skin-on chicken thighs for the best flavor and texture
- Fresh figs can be substituted with dried if fresh are unavailable
- The white wine or chicken broth is optional but adds moisture and flavor to the roasting pan
