Description

Ingredients

  • 4 1/2 cups cubed sweet potatoes about 1 1/2 pounds
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 1 pound lean ground beef
  • 1 Tablespoon tomato paste
  • 1 Tablespoon taco seasoning
  • 2 cups low-fat cottage cheese
  • 1 large avocado or 2 small
  • 4 Tablespoons hot honey

Instructions

  1. Heat your oven to 425 degrees Fahrenheit.
  2. Toss the cubed sweet potatoes on a large baking sheet and coat them evenly with avocado oil spray, salt, pepper, and cinnamon.
  3. Place the sweet potatoes in the oven and roast for 30 minutes, turning them once halfway to ensure caramelization.
  4. While the potatoes roast, warm a skillet over medium-high heat and cook the ground beef along with the tomato paste and taco seasoning until fully browned and cooked through.
