- 1/2 lb bacon cut into quarter pieces
- 1 onion finely chopped
- 1/2 cabbage roughly chopped
- 1/2 lb potatoes washed and diced
- 1 carrot peeled and finely sliced
- 4 to 5 cups chicken stock
- 1 bay leaf
- Kosher salt and black pepper to taste
- Parsley chopped for garnish
Instructions
- Cook the bacon in a large pot over medium heat until it becomes crispy, about 5 to 7 minutes, then remove it with a slotted spoon and keep the bacon fat in the pot.
- Add the chopped onion to the pot and sauté for 3 to 4 minutes until soft, then include the sliced carrot and cook for an additional 2 minutes.
- Mix in the diced potatoes and chopped cabbage, season with salt and pepper, and cook for another 3 to 4 minutes to slightly soften the vegetables.
- Pour the chicken stock into the pot, add the bay leaf, bring to a boil, then lower the heat and let it simmer for 15 to 20 minutes until potatoes and cabbage are tender.
- Return the cooked bacon to the soup, stir well, adjust seasoning as needed, ladle into bowls, garnish with chopped parsley, and serve warm.
