  • Pasta of your choice
  • 2 cups tomato sauce
  • 1 tbsp tomato paste
  • 2 tbsp chopped onion
  • 1 tbsp minced garlic
  • 2 tbsp butter
  • Salt and pepper to taste
  • ½ cup heavy cream
  • 1/2 tsp Italian seasoning
  • 1/2 tsp oregano
  • 1/2 tsp red pepper flakes
  • Shredded parmesan
  • Parsley or Cilantro garnishing

Instructions

  1. Prepare the pasta according to its package directions until al dente, then drain and save about 1 cup of the pasta cooking water.
  2. In a large pan over medium heat, melt the butter and add the chopped onion and minced garlic, cooking until softened and fragrant.
  3. Mix in the tomato paste with the sautéed onion and garlic, then season with oregano and salt.
  4. Reduce the heat and add tomato sauce, heavy cream, and Italian seasoning, stirring until the sauce becomes pink and thickens slightly; let it simmer gently for a few minutes.
  5. Toss the cooked pasta into the sauce, coating it well; thin the sauce with reserved pasta water if needed.
  6. Sprinkle shredded parmesan over the pasta and stir to melt the cheese into the sauce.
  7. Garnish with fresh cilantro or parsley and serve immediately.
