Ingredients

Scale
  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar plus 2 tbsp more
  • 2 garlic cloves minced
  • 1 tbsp fresh ginger minced
  • 67 wooden skewers soaked in water

Instructions

  2. Cut chicken into bite-sized pieces.
  3. In a bowl, mix soy sauce, brown sugar, garlic, and ginger to create the marinade.
  4. Add chicken pieces to marinade and let sit for at least 30 minutes.

  6. Preheat grill to medium heat.
  7. Grill skewers for 10-12 minutes, turning frequently and basting with remaining marinade until cooked through and glazed.

Notes

  • For best flavor, marinate the chicken overnight
  • Use chicken thighs for juicier yakitori
