  • 1 tablespoon olive oil
  • 1 large yellow onion diced about 1 cup
  • 1 tablespoon garlic minced
  • ½ pound ground Italian sausage
  • ½ pound ground beef
  • 1 tablespoon Italian seasoning
  • 2 teaspoons kosher salt
  • 2 teaspoons pepper
  • 1 jar 24 ounces marinara sauce
  • 4 cups 960 g beef broth
  • 1 can 28 ounces crushed tomatoes
  • 12 ounces lasagna noodles broken into pieces
  • ½ cup 119 g heavy cream
  • 1 cup 113 g mozzarella cheese shredded
  • ½ cup 40 g romano cheese shredded
  • ½ cup 50 g parmesan cheese shredded
  • fresh parsley chopped for garnish
  • parmesan shaved for garnish
  • ricotta cheese optional for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; cook until softened about 3-4 minutes.
  2. Add ground Italian sausage and ground beef; cook until browned breaking it up with a spoon about 5-7 minutes.
  3. Stir in Italian seasoning, kosher salt, and pepper. Pour in marinara sauce, beef broth, and crushed tomatoes; bring to a simmer.
  4. Add broken lasagna noodles and cook until noodles are tender about 10 minutes.
  5. Stir in heavy cream and shredded cheeses until melted and combined.
  6. Serve hot garnished with fresh parsley, shaved parmesan, and optional ricotta cheese.

Notes

  • For a richer soup, substitute heavy cream with cream cheese or add extra mozzarella
  • Leftovers reheat well and flavors develop overnight
