This Lazy Cabbage Roll Casserole delivers all the familiar flavors of traditional cabbage rolls with less fuss. It’s a comforting, easy-to-make meal that brings hearty beef, pork, rice, and cabbage together in one simple dish.

- 8 slices bacon diced
- 1 pound lean ground beef
- 1 pound ground pork
- 1 ½ cups tomato juice
- 1 can condensed tomato soup
- 10 cups cabbage washed and coarsely chopped
- ½ cup long grain white rice
Instructions
- Cook the diced bacon along with ground beef and ground pork in a large skillet until the meat is fully browned with no pink remaining, then drain off excess fat.
- Stir in tomato juice and the condensed tomato soup into the meat mixture until evenly combined.
- Spread the chopped cabbage evenly on the bottom of a 9×13 inch baking pan, then sprinkle the rice over the cabbage.
- Pour the meat mixture evenly over the rice and cabbage.
- Cover the pan and bake at 350 degrees Fahrenheit for 90 minutes, or until the rice is tender and all the liquid is absorbed.
- Remove from the oven and let it rest a few minutes before serving.

- For crisp tops, broil 2–3 minutes at the end
