Leftover Mashed Potato Cheese Puffs make a tasty snack or side with a crispy exterior and cheesy inside. This easy leftover potato cheese balls recipe is perfect for using extra mash. Cheddar mashed potato puffs oven baked offer a delightful twist to traditional sides.


Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheese cheddar or mozzarella or your favorite melting cheese
  • 1/4 cup all-purpose flour
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons chives
  • 1/3 cup sour cream
  • Salt to taste
  • 2 eggs beaten

Instructions

  1. Heat your oven to 400°F 200°C and coat a muffin tin with grease.
  2. Whisk together eggs and sour cream until smoothly mixed.
  3. Stir in shredded cheddar cheese, Parmesan cheese, chives, and a pinch of salt into the egg mixture.
  4. Carefully fold in the mashed potatoes until all ingredients are well combined.
  5. Distribute the mixture into each cup of the muffin tin, filling them fully.
  6. Place in the oven and bake for 20 to 25 minutes until the tops become puffed and golden.
  7. Let the puffs cool slightly before removing from the tin and serving.
