- 3 cups mashed potatoes
- 1 cup shredded cheese cheddar or mozzarella or your favorite melting cheese
- 1/4 cup all-purpose flour
- 2 tablespoons Parmesan cheese
- 2 tablespoons chives
- 1/3 cup sour cream
- Salt to taste
- 2 eggs beaten
Instructions
- Heat your oven to 400°F 200°C and coat a muffin tin with grease.
- Whisk together eggs and sour cream until smoothly mixed.
- Stir in shredded cheddar cheese, Parmesan cheese, chives, and a pinch of salt into the egg mixture.
- Carefully fold in the mashed potatoes until all ingredients are well combined.
- Distribute the mixture into each cup of the muffin tin, filling them fully.
- Place in the oven and bake for 20 to 25 minutes until the tops become puffed and golden.
- Let the puffs cool slightly before removing from the tin and serving.
