- 1 pound large shrimp peeled and deveined
- 1 bunch asparagus trimmed and cut into bite-sized pieces
- 4 cloves garlic minced
- 1 lemon juice and zest
- 2 tablespoons olive oil
- 1 tablespoon butter optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes optional
- 2 tablespoons freshly chopped parsley for garnish
Instructions
- Rinse the shrimp under cold water and dry with paper towels then season with salt and black pepper.
- Remove the tough ends from the asparagus and slice into 2 inch pieces.
- Warm 1 tablespoon of olive oil in a large skillet over medium heat, then add the garlic and cook for about 1 to 2 minutes until aromatic.
- Turn the heat to medium-high, place the shrimp in the skillet and cook 2 to 3 minutes on each side until they turn pink and opaque, then remove them and set aside.
- Add the remaining tablespoon of olive oil to the same skillet and cook the asparagus for 3 to 4 minutes until tender but still crisp.
- Return the shrimp to the skillet, pour in the lemon juice and zest, add the butter if using, and stir everything together, cooking for another 1 to 2 minutes to blend the flavors.
- Finish by sprinkling freshly chopped parsley and red pepper flakes if desired before serving immediately.
