Description

Low Carb Cheesy Garlic Chicken Wraps make an easy dinner option perfect for a quick weeknight meal. These family-friendly wraps combine tender chicken and melty cheese for a satisfying low carb dinner that’s ready fast.


Ingredients

  • 2 cups cooked chicken breast shredded or use rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic minced
  • 1/4 cup cream cheese softened
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • 1 handful baby spinach optional

Instructions

  1. Heat a skillet or grill pan on medium and pour in olive oil.
  2. Lightly warm the tortillas in the microwave for about 10 to 15 seconds covered with a damp paper towel to keep them from drying out.
  3. In a bowl, mix together the shredded chicken, mozzarella, cheddar, cream cheese, garlic, parsley, salt, pepper, and spinach if using until coated evenly.
  4. Divide the mixture evenly among the tortillas placing around half a cup on each and roll them up tightly securing the sides.
  5. Put the wraps seam side down in the hot skillet and cook for 2 to 3 minutes on each side until golden brown and cheese is melted.
  6. Take off the heat, slice each wrap diagonally and serve warm, optionally garnished with extra parsley.

Notes

  • Don’t use too much filling or wraps will split open
  • Don’t skip toasting the wraps for best results
  • Mozzarella is classic but experiment with different cheeses
  • Warm wraps before filling to prevent cracking
  • Can swap chicken for leftover turkey or add crumbled bacon for smoky flavor
