- 2 cups cooked chicken breast shredded or use rotisserie chicken
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 cloves garlic minced
- 1/4 cup cream cheese softened
- 1 tablespoon olive oil
- 4 large low-carb tortillas or wraps
- 1 tablespoon fresh parsley chopped
- Salt and pepper to taste
- 1 handful baby spinach optional
Instructions
- Heat a skillet or grill pan on medium and pour in olive oil.
- Lightly warm the tortillas in the microwave for about 10 to 15 seconds covered with a damp paper towel to keep them from drying out.
- In a bowl, mix together the shredded chicken, mozzarella, cheddar, cream cheese, garlic, parsley, salt, pepper, and spinach if using until coated evenly.
- Divide the mixture evenly among the tortillas placing around half a cup on each and roll them up tightly securing the sides.
- Put the wraps seam side down in the hot skillet and cook for 2 to 3 minutes on each side until golden brown and cheese is melted.
- Take off the heat, slice each wrap diagonally and serve warm, optionally garnished with extra parsley.
Notes
- Don’t use too much filling or wraps will split open
- Don’t skip toasting the wraps for best results
- Mozzarella is classic but experiment with different cheeses
- Warm wraps before filling to prevent cracking
- Can swap chicken for leftover turkey or add crumbled bacon for smoky flavor
