Description

This low-carb egglife lasagna is a great choice for an easy dinner or weeknight meal. It combines cheesy layers and savory meat using egglife wraps for a satisfying family dinner. Enjoy a delicious low carb dinner with this simple egglife recipe.


Ingredients

  • 1 package Egglife wraps approx 6 wraps
  • 1 lb ground hamburger 85/15 lean or fat recommended
  • 1 jar Raos marinara sauce or any low-carb sauce approx 24 oz
  • 16 oz cottage cheese small curd 4% milkfat recommended
  • 2 bags shredded mozzarella cheese about 4 cups total
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1 tsp steak seasoning or to taste

Instructions

  1. Heat your oven to 350°F or 175°C and grease an 8×8 baking dish lightly with cooking spray.
  2. In a large skillet on medium-high heat, cook the ground hamburger until no longer pink, breaking it apart, then drain the fat.
  3. Mix the marinara sauce into the cooked meat and let it gently simmer for a few minutes, about 2-3, then take it off the heat.
  4. In a medium bowl, stir together the cottage cheese, one bag of mozzarella cheese, the egg, Italian seasoning, and steak seasoning until thoroughly combined.
  5. Begin assembling by spreading a small amount of meat sauce on the bottom of the dish, layer two Egglife wraps over it, and spread half of the cheese mixture on top.
  6. Add another layer of meat sauce, place two more Egglife wraps, and then spread the rest of the cheese mixture evenly.
  7. Top with the last two Egglife wraps, cover with remaining meat sauce, and sprinkle the second bag of mozzarella cheese on the top.
  8. Bake uncovered for 30 to 45 minutes until it bubbles and forms a golden crust.
  9. Allow the lasagna to sit for 10 to 15 minutes before cutting and serving.

Notes

  • Do not pre-cook the Egglife wraps
  • they will soften during baking
  • You can substitute ground turkey or Italian sausage for the hamburger if preferred
