Description

A cozy and flavorful chicken soup that combines tender chicken, fresh vegetables, and creamy broth for the ultimate comfort meal perfect for any day.


Ingredients

  • 1 teaspoon olive oil
  • 11 ½ pounds boneless skinless chicken breasts or thighs diced into 1 inch pieces
  • 2 teaspoons Italian seasoning divided
  • salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves minced
  • ¼ cup flour
  • 2 tablespoons tomato paste optional
  • 68 cups chicken broth
  • 6 oz pasta
  • 1 cup heavy whipping cream
  • ½1 cup grated parmesan reggiano cheese
  • 2 ½3 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces seasoned with salt pepper and 1 teaspoon Italian seasoning and cook until browned.
  3. Remove chicken and set aside.
  4. In the same pot add carrots celery onions sundried tomatoes and garlic and sauté until softened.
  5. Sprinkle flour over vegetables and stir well to coat.
  6. Stir in tomato paste then gradually whisk in chicken broth.
  7. Bring to a boil then reduce heat and simmer until slightly thickened.
  8. Add cooked chicken pasta heavy cream and remaining Italian seasoning.
  9. Simmer until pasta is tender and soup is heated through.
  10. Stir in parmesan cheese and fresh spinach until cheese melts and spinach wilts.
  11. Adjust seasoning with salt and pepper and serve hot.

Notes

  • For extra richness use homemade chicken broth
  • You can substitute pasta with rice or leave it out for a low-carb version
  • Tomato paste adds depth but can be omitted if desired
