  • 1 tablespoon olive oil
  • 5 cloves garlic minced
  • 1/2 cup sun dried tomatoes chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 15-ounce cans chickpeas drained and rinsed
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup vegan cream See Notes
  • 2 cups baby spinach sliced
  • 45 fresh basil leaves chopped
  • 1/2 cup grated vegan parmesan cheese optional I used Violife

Instructions

  1. Heat the olive oil in a large sauté pan over medium-low heat and cook the garlic for 1 to 2 minutes, stirring often until you can smell its aroma.
  2. Add the sun dried tomatoes along with the oregano, red chili flakes, salt, and pepper; cook this mixture for one minute.
  3. Pour in the chickpeas, vegetable broth, tomato paste, vegan cream, and spinach then mix everything well. Bring the contents to a gentle simmer over medium heat and let it cook for about 5 minutes until warmed and the spinach softens. Adjust seasoning as needed.
  4. Remove the pan from the heat and fold in the fresh basil and vegan parmesan cheese. Serve promptly alongside crusty bread or over cooked rice, pasta, or a baked sweet potato. Enjoy!
