Ingredients
Scale
- 1 (15.25 ounce) package yellow cake mix
- 8 ounces cream cheese
- 1 ½ cups confectioners’ sugar
- 1 (20 ounce) can crushed pineapple with juice
- 2 (8 ounce) cans mandarin oranges drained
- 1 (3.5 ounce) package instant vanilla pudding mix
- 1 (8 ounce) container frozen whipped topping thawed
Instructions
- Prepare the cake mix according to package directions and bake two 8 inch round cake layers. Allow the cakes to cool fully, then cut each layer horizontally to create four cake layers total.
- Beat the cream cheese in a large bowl until smooth and soft. Gradually add the confectioners’ sugar and continue beating.
- Stir in the crushed pineapple with its juice and the drained mandarin oranges, holding back a few slices for garnish. Mix in the dry pudding mix, then fold in the thawed whipped topping carefully until combined.
- Place one cake layer on a serving plate with the cut side facing up and spread a layer of the frosting on top. Add a second layer with the cut side facing down and spread more frosting. Repeat this process with the remaining layers, covering the top and sides with frosting.
- Decorate the top with reserved mandarin orange slices and refrigerate the cake overnight for best flavor and consistency.
