Description

A refreshing and easy no bake summer berry lasagna that layers fresh berries and creamy mascarpone for a delightful dessert perfect for warm days.


Ingredients

Scale
  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1215 graham crackers or ladyfingers
  • Zest of 1 lemon optional

Instructions

  1. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Fold mascarpone cheese into the whipped cream mixture gently.
  3. Spread a layer of graham crackers or ladyfingers on the bottom of the dish.
  4. Add a layer of the mascarpone mixture over the crackers.
  5. Sprinkle a layer of mixed fresh berries on top.
  6. Repeat the layers until ingredients are used up, finishing with a berry layer on top.
  7. Garnish with lemon zest if desired.
  8. Refrigerate for at least 4 hours before serving.
