A refreshing and easy no bake summer berry lasagna that layers fresh berries and creamy mascarpone for a delightful dessert perfect for warm days.
Ingredients

- 2 cups fresh strawberries hulled and sliced
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 2 cups mascarpone cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 12–15 graham crackers or ladyfingers
- Zest of 1 lemon optional
Instructions
- In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Fold mascarpone cheese into the whipped cream mixture gently.
- Spread a layer of graham crackers or ladyfingers on the bottom of the dish.
- Add a layer of the mascarpone mixture over the crackers.
- Sprinkle a layer of mixed fresh berries on top.
- Repeat the layers until ingredients are used up, finishing with a berry layer on top.
- Garnish with lemon zest if desired.
- Refrigerate for at least 4 hours before serving.
Notes
- For best results use fresh and ripe berries
- Let the dessert chill overnight for enhanced flavors
