- 1 tablespoon olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 2 medium carrots diced
- 2 stalks celery diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 6 cups chicken broth
- 2 cups cooked chicken shredded
- 1 package 16 oz gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- to taste salt
- to taste black pepper
- for serving grated Parmesan cheese optional
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, carrots, and celery and sauté until softened.
- Stir in thyme and basil and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and gnocchi and cook until gnocchi float to the top.
- Add fresh spinach and heavy cream, then season with salt and pepper.
- Simmer for 5 more minutes.
- Serve hot with grated Parmesan cheese if desired.
Notes
- For extra flavor, use homemade chicken broth and add a pinch of crushed red pepper for mild heat
