Description

A comforting and creamy chicken gnocchi soup that is easy to make and perfect for a hearty meal. This copycat Olive Garden recipe is rich in flavor and filled with tender chicken and fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 1 package 16 oz gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • to taste salt
  • to taste black pepper
  • for serving grated Parmesan cheese optional

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, carrots, and celery and sauté until softened.
  3. Stir in thyme and basil and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken and gnocchi and cook until gnocchi float to the top.
  6. Add fresh spinach and heavy cream, then season with salt and pepper.
  7. Simmer for 5 more minutes.
  8. Serve hot with grated Parmesan cheese if desired.

Notes

  • For extra flavor, use homemade chicken broth and add a pinch of crushed red pepper for mild heat
