  • 2 boneless skinless chicken breasts diced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Herbes de Provence
  • 1 tbsp olive oil
  • 1/2 stick 4 tbsp unsalted butter
  • 1/2 medium onion diced
  • 2 celery stalks diced
  • 2 carrots shredded
  • 2 tbsp all-purpose flour
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp dried thyme
  • 1/2 tsp ground nutmeg
  • 6 oz fresh spinach
  • 16 oz potato gnocchi

Instructions

  1. Toss the diced chicken with salt, pepper, garlic powder, onion powder, and Herbes de Provence.
  2. Warm olive oil in a Dutch oven over medium-high heat and then brown the chicken until cooked through, about 6 to 8 minutes.
  3. Remove the chicken and set aside.
  4. Lower the heat to medium and melt butter in the same pot.
  5. Add onion, celery, and shredded carrots and cook for about 4 minutes until they soften and release aroma.
  6. Mix in flour until no longer visible and vegetables have a light coating.
  7. Gradually pour in chicken broth and heavy cream while stirring to combine.
  8. Stir in Italian seasoning, thyme, and nutmeg.
  9. Bring the mixture to a gentle boil and then reduce to a simmer.
  10. Add back the cooked chicken along with spinach and gnocchi.
  11. Cover and let simmer for 8 minutes until the gnocchi are tender and soup thickens.
  12. Check seasoning and add more salt or pepper if needed.
  13. Serve hot and enjoy with garlic breadsticks if you like.
