Description

This one pan chicken rice broccoli recipe is perfect for an easy dinner or weeknight dinner. Enjoy juicy chicken, tender broccoli, and fluffy rice all cooked in one pan for a family dinner that’s full of flavor with minimal cleanup.


Ingredients

Scale
  • 3 tablespoons extra virgin olive oil
  • 1/2 medium yellow onion diced finely
  • 1 pound boneless skinless chicken breasts cut into bite sized pieces
  • 2 cloves of garlic minced
  • 1 teaspoon of kosher salt and freshly ground pepper to taste
  • 1 cup uncooked extra long grain white rice
  • 2 1/2 cups of low sodium chicken broth or Better than Buillion Chicken base
  • 2 1/2 cups broccoli florets cut into bite sized pieces
  • 2 cups shredded extra sharp cheddar cheese

Instructions

  1. Heat two tablespoons of olive oil in a large skillet over medium heat and cook the diced onions until they soften.
  2. Season the chicken pieces with salt and pepper then increase the heat to medium high and add the chicken to the skillet.
  3. Brown the chicken thoroughly and add the minced garlic, cooking for about one minute.
  4. Move the chicken to one side of the pan and add the remaining tablespoon of olive oil to the empty side.
  5. Add the uncooked rice to the oil and sauté it for a few minutes.
  6. Pour in the chicken broth and bring to a boil, then reduce the heat to a simmer and cover the pan with a lid.
  7. Let the chicken and rice cook covered for about twelve minutes.
  8. Evenly sprinkle the broccoli over the mixture and stir to combine.
  9. Continue cooking covered on low heat for another eight minutes or until the broccoli and rice are tender.
  10. Remove the pan from heat and stir in half a cup of shredded cheese.
  11. Sprinkle the remaining cheese on top, cover the pan again and let it sit for one to two minutes until the cheese melts.

Notes

  • If you’re using rotisserie chicken add the chicken at the end with the cheese just to heat it through
  • You need a large skillet or pan with a higher edge for this dish to hold everything
  • I used a 12 inch skillet that had a slightly raised edge and it worked great
