  • 1 lb boneless skinless chicken breasts diced
  • 1 tbsp Cajun seasoning adjust to taste
  • 1 tbsp olive oil for sautéing
  • 1 cup diced onions fresh is best
  • 2 cloves garlic minced
  • 1 cup bell pepper diced optional
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish optional

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers then add the diced chicken seasoned with Cajun seasoning, salt, and pepper.
  2. Cook the chicken until it turns golden and is fully cooked, about 5 to 7 minutes, then remove it and keep the flavorful bits in the pot.
  3. Add the diced onions and minced garlic to the pot and cook for 2 to 3 minutes until fragrant, then mix in the diced bell pepper if using.
  4. Pour in the orzo, chicken broth, and heavy cream, then bring the mixture to a gentle boil.
  5. Lower the heat to a simmer, cover the pot, and cook for 10 to 12 minutes, stirring occasionally until the orzo is tender.
  6. Return the cooked chicken to the pot and stir in the grated Parmesan cheese until everything is creamy and well combined.
  7. Adjust seasoning to taste, serve the orzo in bowls, and garnish with fresh parsley if desired.
