A comforting and easy one pot creamy vegetable soup packed with fresh produce and flavorful herbs, perfect for a healthy meal any day of the week.


Ingredients

  • 6 tablespoons butter
  • 1 white onion diced
  • 1.5 cups chopped carrots
  • 1.5 cups chopped celery
  • 6 cloves garlic minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon dried sage
  • 1/3 cup flour
  • 6 cups vegetable broth
  • 2 cups broccoli chopped in bite-sized pieces
  • 1 (15 oz) can corn drained
  • 3 cups (3/4 inch thick) diced potatoes
  • 1/2 cup heavy cream
  • 4 oz sharp cheddar cheese shredded
  • 1 teaspoon balsamic vinegar
  • Kosher salt
  • fresh cracked pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion, carrots, celery, and garlic; sauté until vegetables are tender.
  3. Stir in dried oregano, thyme, and sage, then sprinkle flour over the vegetables and cook for 2 minutes.
  4. Gradually whisk in vegetable broth until smooth.
  5. Add broccoli, corn, and diced potatoes; bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  7. Stir in heavy cream, shredded cheddar cheese, and balsamic vinegar.
  8. Season with salt and fresh cracked pepper to taste.
  9. Cook for an additional 5 minutes until cheese is melted and soup is creamy.
  10. Serve hot and enjoy.
