- 2 tablespoons olive or avocado oil
- 1 pound ground beef
- 1/2 yellow onion finely diced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- kosher salt to taste
- freshly ground black pepper to taste
- 2 tablespoons tomato paste
- 1 (10-ounce) can diced tomatoes and green chiles such as Rotel
- 12 ounces brown rice pasta such as fusilli
- 4 cups chicken broth
- 1 cup shredded cheese optional
- fresh chopped cilantro optional for garnish
- sliced avocado optional for garnish
- sliced jalapeno peppers optional for garnish
- sliced radishes optional for garnish
Instructions
- Warm the oil in a large skillet over medium-high heat then add the ground beef and diced onion. Cook while breaking the meat apart with a spoon until it loses its pink color, about 7 minutes. Drain any excess fat if needed.
- Season the cooked beef with salt, pepper, chili powder, cumin, oregano, and tomato paste and mix well to coat all the meat.
- Stir in the pasta, diced tomatoes with green chiles, and chicken broth until everything is combined.
- Bring the mixture to a boil then lower heat to maintain a gentle boil, stirring often and cooking until the pasta is tender yet firm, around 13 minutes.
- Remove from heat and if desired, stir in shredded cheese. Allow it to rest a few minutes before serving.
- Garnish with fresh cilantro, avocado slices, jalapenos, and radishes as preferred.
