- 2 cups elbow macaroni or pasta of your choice
- 4 cups vegetable broth or water
- 1 cup mixed vegetables e.g. broccoli or bell peppers or spinach
- 2 cups shredded cheese cheddar or vegan cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional spices paprika or Italian seasoning
Instructions
- Heat olive oil in a large pot over medium heat and sauté mixed vegetables for 3-4 minutes until softened.
- Add elbow macaroni and pour in vegetable broth or water, bring to a boil.
- Reduce heat to simmer, cover pot, and cook for 8-10 minutes stirring occasionally until pasta is al dente and most liquid is absorbed.
- Remove pot from heat and stir in shredded cheese until melted and creamy.
- Season with salt, pepper, and optional spices to taste, mix well.
- Serve immediately, garnished as desired.
